Spinach Egg Bake Recipe


We eat quite a few eggs at our house; about 2 dozen per week. And we pretty much eat them in every possible way they can be prepared - scrambled, boiled, poached, fried, in quiches, on sandwiches, in salads, and so on. So I wanted to post an easy and delicious way for the whole family to enjoy a yummy breakfast...or lunch or dinner. :)

Spinach Egg Bake



Ingredients:


10 eggs
1/2 c. flour (we use Pamela's baking and pancake mix) - add 1 t. baking powder if using regular flour
1/2 t. salt
2 cloves garlic, minced
3/4 of a 6 oz. bag of spinach, chopped coarsely
1 c. chopped red (or any color) pepper
1 c. chopped red onion
1/4 c. butter
2 c. shredded cheese
3/4 pound precooked and cubed ham


Directions:

-Preheat oven to 400.
-Saute the onions, peppers and garlic in a pan with butter until tender.
-In a mixing bowl combine eggs, flour and salt; mix well.
-Add the onion mixture to the eggs. Stir in remaining ingredients; mix well.
-Pour into a greased 13X9 inch baking dish.
-Bake uncovered at 400 for 15 minutes then lower the oven temperature to 350 and continue baking another 25-35 minutes or until a knife inserted into the center comes out clean.
-Serve and enjoy!
